Fried fugu(Japanese globefish) with potato salada

1. Fry fugu slices. In place of fugu, you can use any white fish, chicken, or pork.
2. Slice potatoes very thinly and place in water.
3. Take potatoes out of water and spread on a plate. Place fugu on top, and decorate with cress. Season lightly with red pepper. If you prefer, serve with Chinese-style dressing or soy sauce.

Fugu:
Fugu flesh tastes light and delicious. It is eaten raw as sashimi or cooked with vegetables. However, fugu livers and ovaries contain a highly toxic poison. Thus, a chef must have a special license to prepare fugu. Long ago, eating fugu was often fatal, with the poison inducing sudden death. Thus, fugu was nicknamed "gun." Sake flavored by pouring it hot over scorched fugu fins has a special flavor loved by gourmets.
